Zi Martino's cuisine is rooted in local and family recipes, where homemade pasta like pappardelle and tortelli are second to none. Zi Martino-style tortelli, made with fresh pasta made with flour and eggs and filled with ricotta and spinach, are a must. They can be served plain with butter and sage, or dressed with our homemade olive oil or, even better, with ragù: smaller and more robust than the traditional Maremma pasta... an enduring legend since 1965.
